It's known for its potential gut health benefits due to the probiotics it contains. Composition and Production ----------------------------------------------- Kombucha is produced through a fermentation process involving a SCOBY, which stands for Symbiotic Culture Of Bacteria and Yeast. Ingredients: The foundational ingredients are water, tea (black or green), and sugar. The sugar is consumed by the yeast and bacteria during fermentation and is essential for the process, not primarily for the final consumer. Fermentation Process: A SCOBY is added to the sweetened tea and allowed to ferment at room temperature, typically for one to two weeks. During this first fermentation, the yeast produces alcohol and carbon dioxide, which the bacteria then convert into organic acids, giving kombucha its characteristic tart, slightly acidic taste and fizziness. Flavoring and Carbonation: After the first fermentation, the SCOBY is removed. Flavorings like fruit juices, spices, or herbs are often added, and the liquid is bottled for a secondary fermentation to boost carbonation and enhance flavor. The Result: The finished drink contains vitamins, antioxidants (polyphenols from the tea), natural acids, and live probiotics. Most commercial kombucha contains small traces of alcohol, usually less than 0.5% ABV (alcohol by volume).
